Holiday drinks don't have to be spiked to be fabulous: here, Chef Harry Schwartz creates drinks with spirit -- but not a drop of spirits!

One tantalizing example: hot chocolate (at right) topped with a sugared marshmallow (see Garnishes, below).

    Hot Drinks

    Basic Hot Chocolate
    (Serves 1)

    Ingredients:
    1 Tbsp. cocoa powder
    2 Tbsp. sugar
    2 Tbsp. water
    1 tsp. vanilla extract
    1 c. milk
    1 Tbsp. cream

    Steps:

    1. In a one-quart thick-bottomed saucepan over medium heat, whisk together the cocoa, sugar, water and vanilla until it begins to bubble.
    2. Whisk in the milk and cream and bring to a simmer.
    3. Whisk again before serving in a mug. You may multiply this recipe as many times as needed. Just use a larger pan.

    Eggnog
    (Serves 4)

    Ingredients:
    4 egg yolks
    1 c. sugar
    1 tsp. ground cinnamon
    Dash clove powder (optional)
    4 c. whole milk
    1 Tbsp. vanilla extract
    1 c. cream

    Steps:

    1. In a three-quart saucepan over medium heat, whisk together the egg yolks, sugar, cinnamon, clove and 1 cup milk until blended.
    2. Slowly whisk in the remaining milk until incorporated.
    3. Add the vanilla and cream and bring the mixture to a simmer while stirring constantly.
    4. Simmer gently until slightly thickened.

    Quick, Refreshing Cold Drinks

    • White Grape Juice Spritzer: Equal parts grape juice to lemon-lime soda water.

    • Cranberry Sparkler: Place a few dried cranberries in a glass, add lemon-lime club soda and a splash of cranberry juice.

    • Mock Champagne: Two parts ginger ale to one part white grape juice.

    Garnishes

    1. Dip a slice of orange in colored sugar, one side in red and the other in green, and use it to garnish a cold drink.

    2. Cut off both ends of a licorice stick and use it as a straw / swizzle stick.

    3. You can buy colored candy foams to spray on top of drinks. Spray a single color -- or add a dollop of a second color in the center.

    4. Hold marshmallows under running water for a moment, then dip the ends in colored sugar and float them in hot cocoa.

    5. A cinnamon stick in a cup of hot chocolate adds a tantalizing hint of flavor.

    6. Unwrapped and dropped into a cup of cocoa or eggnog, Hanukkah gelt -- foil-covered chocolate coins -- melt and make a nice little surprise at the bottom of the cup when the beverage is finished.
