Holiday drinks don't have to be spiked to be fabulous: here, Chef Harry Schwartz creates drinks with spirit -- but not a drop of spirits!One tantalizing example: hot chocolate (at right) topped with a sugared marshmallow (see Garnishes, below).
Hot DrinksBasic Hot Chocolate
(Serves 1)
Ingredients:
1 Tbsp. cocoa powder
2 Tbsp. sugar
2 Tbsp. water
1 tsp. vanilla extract
1 c. milk
1 Tbsp. cream
Steps:
- In a one-quart thick-bottomed saucepan over medium heat, whisk together the cocoa, sugar, water and vanilla until it begins to bubble.
- Whisk in the milk and cream and bring to a simmer.
- Whisk again before serving in a mug. You may multiply this recipe as many times as needed. Just use a larger pan.
Eggnog
(Serves 4)
Ingredients:
4 egg yolks
1 c. sugar
1 tsp. ground cinnamon
Dash clove powder (optional)
4 c. whole milk
1 Tbsp. vanilla extract
1 c. cream
Steps:
- In a three-quart saucepan over medium heat, whisk together the egg yolks, sugar, cinnamon, clove and 1 cup milk until blended.
- Slowly whisk in the remaining milk until incorporated.
- Add the vanilla and cream and bring the mixture to a simmer while stirring constantly.
- Simmer gently until slightly thickened.
Quick, Refreshing Cold Drinks
- White Grape Juice Spritzer: Equal parts grape juice to lemon-lime soda water.
- Cranberry Sparkler: Place a few dried cranberries in a glass, add lemon-lime club soda and a splash of cranberry juice.
- Mock Champagne: Two parts ginger ale to one part white grape juice.
