  • Q: I love tuna, and I’m looking for a great way to prepare it on the grill. Can you help with a good recipe?

    A: (from DIY chef Paul Sturkey): I love grilled tuna and it’s a dish that can be served up many ways, but I’m going to show you how to prepare tuna with an Asian flair. I’m going to make it with smoked shiitake mushrooms and a delicious ginger soy dressing.

    Grilled Tuna with Smoked Shiitake Mushrooms and Ginger Soy Dressing

    Tuna

    Ingredients:

    4, 6-8 oz. Ahi tuna
    Salt
    Pepper
    1 cup salad oil
    1 Tbs. garlic minced
    1 cup tomatoes peeled, and chopped
    1/3 cup green onions chopped
    Non-stick spray

    • Combine all ingredients in a glass bowl (except tuna) and pour over tuna.

    • Refrigerate and marinate three to four hours.

    Ginger Soy Dressing

    Ingredients:

    2 Tbs. chopped shallots
    2 Tbs. garlic fine chopped
    2 Tbs. ginger fine chopped
    2 Tbs. green onion
    1/2 cup low sodium soy sauce
    1 cup olive oil
    1/4 cup honey
    2 Tbs. horseradish minced
    2 Tbs. lime juice

    • Combine all ingredients and let marinade for one hour.

    Mushrooms

    Ingredients:

    3 cups shiitake mushrooms (caps only) washed, and sliced julienne
    2 Tbs. olive oil
    3 cloves garlic peeled and sliced thin
    1 cup all natural wood chips
    1 cup water for soaking chips

    • Preheat the grill to 350 degrees

    • Place wood chips in water and soak 30 minutes.

    • Place chips into a foil pouch with holes poked in it and place on hot coals. When chips start to smoke, place cast iron skillet on the grill and add olive oil.

    • Add mushrooms and garlic and close lid on the grill and smoke five to seven minutes.

    • Remove skillet and let mushroom mixture cool. Remove smoking pouch and allow to cool before discarding.

    Back to the Tuna

    • Remove tuna from marinade and pat dry with paper towel.

    • Spray tuna with non-stick spray and place on the hottest part of the grill for only two to three minutes.

    • Spray top of tuna and turn only once and grill on the second side for only one minute.

    • Remove tuna from the grill and let rest two minutes.

    • Slice tuna steaks in half diagonally and place on a plate.

    • Place the smoked mushroom and garlic mixture on top and drizzle with the ginger soy dressing.

    • Serve with a small mixed green salad, pickled ginger and chopped sticks.
