    Spicy Scrambled Eggs

    Mexican

    1. For a spicy little Mexican flavor, the chipotle pepper is ideal. Chipotle peppers are simply roasted and smoked jalapenos and they are pretty hot.

    2. The dried ones should be steamed and then the seeds removed.

    3. Use tongs to keep from touching the pepper because it can burn the skin.

    4. Mince the peppers to add a smoky hot flavor

    5. For added punch, try chipotles packed in adobo, a Mexican tomato sauce.

    6. In a scrambled eggs dish, a quarter teaspoon is all you’ll need for every two servings.

    Asian

    1. For a little Asian flair, use saffron. Some call it the world’s most precious spice because it’s so expensive. It’s made from the stigmas of the saffron flower. Each flower has only three stigmas...called threads once they’re dried. Fortunately, you won’t need many threads to get a rich flavor.

    2. For getting the most from saffron, add two tablespoons of boiling water for every five threads and steep about 30 minutes. This releases an exotic Asian aroma and flavor. Use the water and threads to mix in to your scrambled eggs mixture.

    Indian

    Most of us have had Indian curry. The bright yellow spice adds a distinctive savory flavor to any dish. A half teaspoon is enough for scrambled eggs for two people.

    Roasted Garlic

    1. Another spice is roasted garlic. It tastes great and is so easy to make. Believe it or not, it does wonders for scrambled eggs.

    2. Cut the top off of a bulb of garlic and place it cut side down in a small pot.

    3. Add a teaspoon of olive oil for each bulb and roast, covered for about 30 minutes.

    4. Two cloves mashed into scrambled eggs is heaven.
