    Pan Seared Duck Breast with Apple Butter Sauce

    Ingredients:
    2 fresh duck breasts (split to make four halfs)
    2 Tbs. olive oil
    3 Tbs. Sturkey Spice
    3 Tbs. brandy
    2 Tbs. shallots (chopped)
    1 Tbs. garlic (minced)
    1 cup dry white wine
    3/4 cup apple butter
    2 cups demi glace or rich brown sauce
    1 red apple cut med. dice- skin on
    1 golden apple cut med. dice- skin on
    kosher salt and black pepper

    1. Pre-heat oven to 350 degrees.

    2. Heat a large oven safe skillet over medium heat. Place oil in pan.

    3. Score the skin of the duck breasts with a sharp knife about 1/4" thick.

    4. Season the duck with Sturkey Spice on both sides.

    5. Place the duck breasts in the skillet skin side down. Allow to sear for two minutes or so and turn only once.

    6. Place into oven and bake for 12 minutes.

    7. Remove from oven and remove duck from the hot pan. Keep warm. Add the brandy and allow to reduce.

    8. Place skillet on the burner over medium heat and add shallots, garlic and white wine.

    9. Allow to reduce by 1/2 it’s volume and add apple butter and demi glace and bring to a boil.

    10. Add the apples and let cook two minutes.

    11. Check seasoning for salt and pepper preference.

    12. Slice the duck and spoon the sauce around the plate.

    13. Serve with roasted garlic grits and your favorite vegetables.
