    North Carolina Rib Recipe

    Mike's Baby Back Pork Ribs

    Ingredients:

4 racks baby back pork ribs, each cut in half
dry rub (recipe follows--or use your favorite rub)
    aluminum foil
    plastic wrap
barbecue sauce (optional--or use your favorite)

    Rib Preparation:

Rub ribs generously on both sides with rib rub and let marinate for 2 hours. Take each rib half and wrap individually in plastic wrap. Take rib wrapped in plastic wrap and wrap in aluminum foil. Preheat grill to 275 degrees. Place ribs on grill and cook 4 hours.

At this point you may choose to remove ribs from grill, refrigerate and use the following day--as cooking time is fairly long.

Remove ribs from grill and remove all wrappings. Raise the grill temperature to 350 degrees. Place ribs directly on grill and grill for 5 minutes on each side. Ribs can be served dry or basted with your favorite barbecue sauce.

    Dry Rub

    Ingredients:

    1/4 cup paprika
    14 cup dark brown sugar
    1 Tbs. cumin
    1 Tbs. onion powder
    1 Tbs. garlic powder
    1 Tbs. kosher salt
    1 Tbs. dry mustard
    1 Tbs. ground black pepper
    1 Tbs. cayenne pepper

Combine all the ingredients in a small bowl and mix.
