Preparation:Combine ground sirloin, onion and green pepper into a large pan. Cook until beef has browned, drain all grease. Place beef mixture into a slow cooker and add tomatoes, tomato sauce, water and all seasonings.
Cook on low heat overnight--or on high heat approximately 4 hours. One hour prior to serving, add pinto beans and let simmer.
Garnish with the following: grated cheese, diced onion, sour cream and oyster crackers.
Country Ham Biscuits
Buttermilk Biscuits
2 cups sifted self-rising flour
1/4 tsp. baking soda
1/3 cup shortening
3/4 cup buttermilk
Preparation:
Stir flour and baking soda together in mixing bowl and mix in shortening until mixture resembles course crumbs. Make a well in the above mixture and add milk. Stir quickly with fork just until dough follows fork around the bowl. Turn onto lightly floured surface (dough should be soft).
Knead gently 10-12 strokes. Flour the cutting board with 2/3 cup of flour and turn dough into floured cutting board and roll dough to a thickness of 1/2".
Dip biscuit cutter into flour, and then press straight down into the dough. Bake on an ungreased baking sheet-450 degrees for 12 minutes.
Yield: 10-12 large biscuits
Country Ham
2 lbs. county ham (cut into biscuit-size pieces)
1/2 cup water
1/4 cup brewed coffee
Preparation:
Place country ham in a 10-12" frying pan with 1/2 cup of water and simmer out the water using medium-high heat. Once the water has simmered out, fry ham until slightly darkened.
Place one slice of ham into each biscuit.
Pig in the Blanket
Ingredients:
1 lb. Carolina Packers hot dogs (or any brand hot dog you desire)
1 lb bacon
1 lb American hoop cheese
Preparation:
Slice hot dogs lengthwise--but not completely in two. Insert a 1/4" strip of cheese into the slit in the hot dog. Wrap one slice of bacon around the hot dog and place onto a baking sheet.
Repeat process with remaining dogs.
Bake at 350 degrees for 45 minutes, remove from baking sheet and drain any remaining grease.
Serve immediately.
