This recipe looks fancy and complex, but it is super easy to make and super delicious to eat. Makes 18 to 20 triangles.
1 sheet of ready-to-use puff pastry
1 large can of diced tomatoes
goat cheese crumbles
salt and pepper to taste
Let the puff pastry dough rest at room temperature for 20 minutes. Preheat the oven to 375 degrees F.
Line a cookie sheet with parchment paper.
Cut puff pastry into even squares then divide into triangles; lay on parchment paper. You can also bake the pastry sheets in squares then cut into triangles after baking.
In a frying pan, cook bacon to just before it turns crisp.
Scoop a tablespoon of diced tomato on each triangle or cover entire pastry sheet with tomatoes. Add bacon, goat cheese and herbs, then season with salt and pepper. Drizzle olive oil on top.
Bake for about 10 minutes or until the pastry is nicely puffed and golden. Decorate with a few arugula leaves and enjoy.
(You can add bacon sprinkles after baking pastry.)
